Well, this week I am going to be embarking on something new! Vegetarian and vegan cooking classes. Now, I am not a vegetarian myself, and I am definitely not vegan. However, I find that I want to eat healthier with my daughter, and the truth is I need some more tools to do that well. My husband and I also got the opportunity to volunteer this summer at a missions week in Quebec. My task is to come up with alternative meal plans for the participants, (there will be more to come on this later). So, I thought this cooking class could also help in my preparation for that trip. I love to cook and spend time in the kitchen, but I don’t really know how to cut vegetables the right way. Think this doesn’t matter? Try baking Eggplant Lasagna without knowing what you are doing with the eggplant. I did it, and my nice guests somehow maneuvered the large hulking eggplant strips I had left in the dish. Bless them. The truth is, it was awful. My mom tried it, and even she said in her perfectly mom way: “I tried the eggplant; remember when we had your cousin’s eggplant, and it was so good? Why don’t you get her recipe”. My cousin does make delicious Eggplant Parmesan, and her eggplant doesn’t feel like an albatross in your mouth trying to escape! I got her recipe for future use.
Needless to say, I could benefit from a course on cooking the right way with vegetables and other non-meat foods. My family will also benefit and of course my daughter. How great would it be if she grew up loving her veggies! I am pretty sure this is a reality for some people who are not me. Maybe I will be the next one to get on this veggie train!
So, this coming week I will begin. I will be sharing some of my experiences, recipes and meals with you on this site. I hope you will tune in and check out my progress… and my missteps
